Maple Syrup
This is similar to honey mustard except we use 100% organic maple syrup. You will find it complex of flavor. It goes well as a ham glaze, on salmon or as a sandwich spread.
Vidalia Onion
Inspired from a customer who purchased our red onion mustard. This is a great hot dog mustard. Vidalia onions are sweet. This mustard has inspired me to buy better quality hot dogs!
Texas Noonday Onion
At the Texas State Fair last year, a customer tried and bought the Vidalia onion mustard but also asked if we had heard of Texas Noonday onions. At the time the answer was no. Noonday onions are the same species of onion as Vidal onions but are grown only in Noonday Texas. I met with the farmer (Brent Phillips) and purchased a limited quantity. I really like this mustard!
Traditional
It’s difficult to make a traditional yellow mustard as the competition are the major names in grocery stores. That said, you will find the quality, flavor and consistency of ours of much higher quality.
Hot English
Hot English is a style of mustard that contains yellow and brown mustard mixed together. In ours, we use the yellow mustard powder present in all our mustards and we fresh grind brown mustard seed. We then combine them to make a 50/50 ratio of yellow to brown. This is a really, really delicious mustard and our biggest seller.
Brown
Our brown mustard is made from 100% fresh ground brown mustard seed. Most of the “brown” mustard available in a grocery store is really a traditional yellow mustard with cayenne pepper added. This is a very hearty sinus cleaning mustard.
Horseradish
Our Horseradish is a delicious pairing of horseradish and mustard. The horseradish is fresh horseradish root that we peel, then cut into pieces small enough for the food processor before mixing it into the mustard. We recommend that if you try this, that you also try the Hot English
Jalapeno
Our Jalapeno mustard starts with fresh jalapenos. We wash them, cut off the stems off then place the entire jalapeno in the blender seeds and all. This is a very clean spicy mustard.
Blakes (Jalapeno, Cilantro Lime)
One day all the market’s were closed because of weather. Blake who is a significant asset to Charlie’s Mustard and runs a few markets for us asked if we could play in the kitchen, ad he wanted to try a new recipe. It was this. We slice up the Jalapeno’s, roast them in a pan with lime juice then add them with cilantro in the blender. We tried it and people really liked it. What a better name for it than Blake’s!
Beer
The three main ingredients in all mustards are mustard powder, vinegar and water. We of course add some extra spices but those three are the key ones. One day, I woke at 3 am and wondered, who exactly declared you needed to add water? We tried using beer instead. Being in Texas we of course chose Shiner Bock. What a wonderful mustard on brats or soft pretzels!
Roasted Garlic
Fresh roasted garlic is simply delicious and healthy! In this mustard we start with whole cloves of garlic, spray a little olive oil on them and roast them in the oven at 400 F for 25 minutes. We then add them to the mustard in the blender. This is a very flavorful mustard and was our biggest seller at the Texas State Fair last year. It has been replaced so far with Hot English but is a solid #2 favorite.
Mustard Sauces
Mustard sauces are of course based on mustard but they also contain butter, milk, eggs and sugar. In addition, we use apple cider vinegar instead of white vinegar. These can be used as a sandwich spread like our mustards or as a sauce for cooking. These all originated from a glaze I made for a New Year’s day ham in 2019. We market that as Original.
Tarragon
The Tarragon Mustard Sauce is our original mustard sauce with added Tarragon. When I first made this, I literally started salivating thinking about the original mustard sauce with tarragon to have on salmon. This continues to be one of our top sellers. Enjoy it on a sandwich, added to tuna fish, on seafood (salmon, shrimp or lobster tails).
Simon & Garfunkel
One of my favorite spice combinations comes from a song written and sung by Simon & Garfunkel in the early 70’s called Scarborough Fair. The first line of the song is “Are you going to Scarborough Fair?”. The second is “Parsley, Sage, Rosemary and Thyme”. That is the spice combination in this delicious sauce. Use this on roasted potatoes, potato salad, deviled eggs or as a spread on a sandwich. This was our number 2 seller at the Texas State Fair last year. It is delicious!
Spicy
Based on our original mustard sauce, we’ve added cayenne pepper. It’s a smooth and delicious mustard sauce that nicely kicks up a sandwich.
Dill
The story behind this mustard is interesting. I was getting my annual physical exam and of course the doctor asked me how my life was. I told him that I was enjoying making mustard and had sold some at my local church’s craft fair. After describing some of the flavors I made, he asked me if I had ever considered dill. I looked him straight in the eye and said, not until this moment. I gave him the first jar.
Original
This is the very first mustard anything that I made. It was made to spruce up a New Year’s day ham in 2019. It is delicious! Many friends asked me to make it for them which I did.
